We can live three weeks without food, a few days without water, but only a few minutes without precious oxygen which is why we aren't consciously aware of breathing on a minute by minute basis. For survival reasons, our mind must be free to think of other things. And the irony is that in today's modern world, awareness of the breath is perhaps the one skill we need to survive in the fast-paced society we have created.
The foundation of any successful mindfulness practice is tuning into your anchor. In this case, we'll practice anchoring into the breath.
